Letter to Nash on his 3rd Birthday

Dear Nash Bear,
HAPPY BIRTHDAY! You are three years old today. It’s hard to believe it’s been that long since you made me a mom. I feel like I just gave birth to you yesterday. Your personality shines through more and more every day, and I am in awe of the little human you are becoming.

I never want to forget the way you say Mommy and run to give me hugs and kisses. You are the sweetest little boy. I love the way you always want to show me your “Hulk” muscles and Ninja Turtle moves. I love the way you look after your “baby Chase”.

I’m sad that you’re growing up so fast, but I am also loving watching you grow up. I know you will do great things! If you touch one person with your sweet personality and winning smile… my work here is done. 

I love you to the moon and back! Happy Birthday!

Easy Christmas Cookies

I am obsessed with Christmas🎄 Today was a snow day in NC ❄️☃️ So we spent our day dancing to Christmas music and baking delicious cookies. Here are a couple of my favorite recipes that are super easy to make with little ones. Enjoy!! Merry Christmas 😘

Peanut Butter Kiss Cookie
Ingredients:
• Peanut Butter
• Butter
• Sugar
• Brown Sugar
• Vanilla
• 1 Egg
• Flour
• Baking Soda
• Salt
• 24 Hershey Kisses (unwrapped)
1 Preheat oven to 350.
2 Cream together peanut butter, butter, sugar and brown sugar until smooth.
3 Add egg and vanilla and beat together.
4 Whisk together flour, baking soda and salt in a separate bowl.
5 Slowly add dry ingredients to the creamed mixture, beating until incorporated.
6 Roll into 24 1″ balls and place on cookie sheet several inches apart.
7 Gently make an indentation in the center of each cookie.
7 Bake 12-14 minutes.
8. Place a Hershey Kiss in the center of each cookie.

Chocolate Cloud Cookies
Ingredients
• 1 cup unsweetened cocoa powder
• 2 cups granulated sugar
• 1/2 cup butter – room temperature
• 4 large eggs
• 2 tsp vanilla extract
• 1/2 tsp table salt
• 2 tsp baking powder
• 2 cups all-purpose flour
• 1/2 cup confectioners sugar

Instructions
1 Combine cocoa, granulated sugar & butter in a mixing bowl & beat together on medium speed. Reduce the speed to low & add eggs mixing until just combined.
2 Mix in vanilla, salt, baking powder & then flour until well incorporated.
3 Cover the bowl with plastic wrap & chill in the refrigerator for 4 hours.
4 Preheat the oven to 350 degrees F.
5 Line baking sheets with parchment paper.
6 Roll the dough into 1-inch balls & coat with confectioners sugar.
7 Place on the prepared baking sheet at least 2 inches apart.
8 Bake for 10 minutes.
9 Allow the cookies to cool on sheet for one minute before transferring to a wire rack to cool completely.

Christmas Funfetti Sugar Cookies
Ingredients:
1 box (18.25 oz) vanilla/white cake mix, such as Duncan Hines
1 teaspoon baking powder
2 large eggs
1/3 cup vegetable/canola oil or melted coconut oil
1/2 teaspoon vanilla extract
1 cup sprinkles
Directions:
1 Preheat oven to 350F. Line large baking sheet with parchment paper or silicone baking mat. Set aside.
2 In a large bowl, mix together the cake mix and baking powder. Set aside. In a smaller bowl, whisk together the eggs, oil, and vanilla by hand. Add the egg mixture to the cake mixture and stir to form a dough- stir vigorously until all of the pockets of dry cake mix are gone. Gently mix in the sprinkles – you do not want to dye the cookie dough by overstirring the sprinkles.
3 Drop rounded 1-inch balls of dough onto prepared baking sheet. Bake for 9 minutes – do not let the cookies get brown. Allow to cool on baking sheet for 3 minutes; they will be very soft at first. As they cool, the tops will settle down so you will not have to press the cookies down yourself. Transfer to a wire rack to cool completely.

Wow! It has been a whole year! One year of holding you, kissing you, cuddling you, feeding you, changing your diaper, watching you grow. I remember every moment of the day you were born. I had been having contractions for days but your dad was out of town for work. The night he got back, the contractions were getting stronger. In the morning, I decided to go get checked at the hospital while your grandparents were in town to watch Nash. When I arrived they told me I was dilated to 6 and in labor. I immediately started crying. I was so excited to finally meet you.  

I have watched you learn to hold your head up, roll over, crawl and standup on everything. You LOVE to eat and follow your big brother around. Dancing is your favorite! You are always laughing and smiling. You only cry when you are hungry or tired. 

I hope you know that you are so, so loved. Your Daddy and I always promise to do our best to teach you right from wrong and keep you safe. In a crazy world full of so much evil, we promise to show you the good. I hope you always know how precious you are. 

Chase Westbrooke Spears, I am so blessed to be your mommy. I thank God every day for you. I can’t wait to watch you grow.

Açaí Bowl Recipe

Y’all! This is my new favorite snack. The whole family is obsessed. Here is my Açaí recipe that Nash asks for almost every day. ENJOY!

Ingredients:

-1 (100g) packet frozen acai berry blend I   used the unsweetened version from Sambazon

-1 banana frozen

-¼ cup non-dairy milk or yogurt I used Almond Milk

-Fresh berries/coconut/granola to top

Instructions:

– In a high-powered blender, combine the acai berry packet, frozen banana, and 1/4 cup Almond Milk or yogurt. Blend until completely smooth.

– Pour into a bowl and top with berries, coconut, and/or granola.

• 6oz Maine Root Ginger Beer 

•2oz Vodka 

•1/2 (splash) Lime Juice

•Garnish with mint and lime

•5-6oz Trader Joe’s Jalapeño Limeade

Avocado Pudding
1 whole avacado
1 cup almond milk
1 tbsp organic cane sugar
Put ingredients in blender.
Blend together and chill in refrigerator for 15mins. Eat with spoon.

Smoothie
1 cup strawberries fresh or frozen
1 banana frozen
handful spinach
2 tbsp greek yogurt plain
splash of almond milk
1-2 tsp chia seeds
Blend and serve

Salad Dressing
1 whole clove garlic, peeled
1/4 cup balsamic vinegar
1/2 cup extra-virgin olive oil
1 teaspoon honey
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Smash the garlic clove with the back of a knife. Add garlic to the other ingredients in a jar or other airtight container. Cover, shake well and serve. Store in the refrigerator for up to 1 week.
